This classic gyuto shape knife with kurouchi finish and magnolia handle is made from Shirogami White steel #2. It is a reactive carbon steel which is easy to sharpen and holds an edge well. Kurouchi finish is achieved by leaving the furnace scale from the forging process on the blade. White carbon steel enables the sharpest cutting edge for all users. White steel #2 knives are ideal for the first-time users of Japanese traditional knives.

It is a reactive carbon steel which is easy to sharpen and holds an edge well. White carbon steel enables the sharpest cutting edge for all users.
